Baby Date & Coconut Balls

Shock horror as I told the baby we were making baby balls today 🤣


Whoops!


All good kiddo, just some yummy plant powered snacks for you.


I kind of threw this all together, so you may need to tweak a little.


Gluten free, dairy free, nut free, no refined sugar.


Ingredients:

10-12 medjool dates, pitted

3 cups shredded coconut

1/4 cup dried goji berries

2 tbs flaxseed

2 tbs chia seed

2 tbs tahini

2 tsp beet powder


Method:

  1. Place coconut, seeds and beet powder in high speed blender or processor and process until fine.

  2. Add remaining ingredients and blend until well combined. Texture should be able to be rolled into balls. Add extra dates if it doesn't quite come together.

  3. Roll into little bite size shapes for baby. Use caution on size and shape to not create a choking hazard.

  4. Roll into larger size bliss balls for you.

  5. Store in an airtight container in the fridge.
