These cookies are soft, chewy, sweet and nutty!
2 cups dry roasted cashews
2 packed cups shredded coconut
1/2 cup almond meal
1/2 cup date syrup*
1/2 cup dried cranberries
2 tbs almond butter
1 tsp vanilla
Preheat oven to 180°C.
Place nuts and coconut in a food processor and process until fine.
Add almond meal, date syrup, almond butter, vanilla and salt. Process until well combined.
Pulse in dried cranberries.
Shape into balls, place on a lined tray and press to flatten.
Bake 6-8 minutes or until golden.
Allow to cool on tray.
*Other liquid sweetener should work. I found date syrup in health food aisle at Woolworths.
You could also not cook these but you will need to add a little extra almond meal or roll in coconut or cacao powder as they are quite sticky.
