Chewy Cranberry & Nut Cookies



These cookies are soft, chewy, sweet and nutty!


Ingredients:

  • 2 cups dry roasted cashews

  • 2 packed cups shredded coconut

  • 1/2 cup almond meal

  • 1/2 cup date syrup*

  • 1/2 cup dried cranberries

  • 2 tbs almond butter

  • 1 tsp vanilla

  • Pinch salt


Method:

  1. Preheat oven to 180°C.

  2. Place nuts and coconut in a food processor and process until fine.

  3. Add almond meal, date syrup, almond butter, vanilla and salt. Process until well combined.

  4. Pulse in dried cranberries.

  5. Shape into balls, place on a lined tray and press to flatten.

  6. Bake 6-8 minutes or until golden.

  7. Allow to cool on tray.



*Other liquid sweetener should work. I found date syrup in health food aisle at Woolworths.


You could also not cook these but you will need to add a little extra almond meal or roll in coconut or cacao powder as they are quite sticky.
