Coconut & Pumpkin Brown Rice

I love a good hearty, one pot dinner. Especially good for cooler days!


  • 2 cups brown rice

  • 1/4 large kent pumpkin, cubed

  • 1 brown onion, thinly sliced

  • 1 tomato, chopped

  • 1/4 red capsicum, chopped

  • Couple handfuls green beans, chopped

  • Couple handfuls baby spinach

  • 200ml coconut cream

  • 2 tbs coconut oil

  • 1-2 tbs curry powder

  • Salt & pepper

  • Chill (optional)


  1. In a large saucepan heat the coconut oil over medium heat. Add the onion and sauce until softened.

  2. Stir through pumpkin, curry powder and brown rice.

  3. Add 3 cups water, tomato and the coconut cream and bring to a boil. Cover and simmer for 20 minutes.

  4. Stir through the beans and capsicum. Cover pot and simmer until liquid is mostly absorbed.

  5. Place a small handful baby spinach in each bowl.

  6. Top with coconut and pumpkin rice, and season with salt, pepper and chilli.
