I love a good hearty, one pot dinner. Especially good for cooler days!
2 cups brown rice
1/4 large kent pumpkin, cubed
1 brown onion, thinly sliced
1 tomato, chopped
1/4 red capsicum, chopped
Couple handfuls green beans, chopped
Couple handfuls baby spinach
200ml coconut cream
2 tbs coconut oil
1-2 tbs curry powder
Salt & pepper
In a large saucepan heat the coconut oil over medium heat. Add the onion and sauce until softened.
Stir through pumpkin, curry powder and brown rice.
Add 3 cups water, tomato and the coconut cream and bring to a boil. Cover and simmer for 20 minutes.
Stir through the beans and capsicum. Cover pot and simmer until liquid is mostly absorbed.
Place a small handful baby spinach in each bowl.
Top with coconut and pumpkin rice, and season with salt, pepper and chilli.
