Mini Munchers Recipe

This is a gluten free version of Anzac Biscuits!


1 cup almonds or GF flour blend

1 cup quinoa flakes

1 cup desiccated coconut

1/2 cup coconut sugar

1/4 cup coconut oil

2 tbs maple syrup or rice malt syrup

1 tsp bicarb soda

1 tsp apple cider vinegar

1-2 tbs water (as required)


  1. Preheat oven to 150C.

  2. Process almonds (or flour), quinoa flakes, coconut, and coconut sugar until a fine crumble.

  3. Mix bicarb with vinegar in a small dish and then add to processor with remaining ingredients.

  4. Add a little water at a time to get just the right doughy texture.

  5. Roll and flatten on a greased tray or press into a silicon mini muffin tray.

  6. Bake for 15-20 mins or until golden.

  7. Allow to cool slightly before eating.

  8. Store in an airtight container.
