Double Chocolate Cookies (Vegan/GF)
Ingredients:
1/2 cup semi hardened coconut oil
1 cup coconut sugar
1 1/2 cups gluten free plain flour
1/2 cup cacao powder
1/2 tsp bicarb
1 tsp apple cider vinegar
1 tsp vanilla
1/2 cup soy milk
1/2 cup dark chocolate chips
Directions:
Preheat oven to 170°C and line two baking trays.
Mix the coconut oil and coconut sugar until buttery texture. Add bi carb and apple cider vinegar together so the bicarb bubbles.
Add remaining ingredients except chocolate chips and keep stirring and mashing the ingredients together until smooth.
Add chocolate chips and stir to distribute evenly.
Scoop into balls and spread out on trays.
Bake 12 minutes. Remove and allow to cool on trays when cooked.
